Salad Recipe: Mango Salad With Homemade Dressing

Sometimes I just want a salad that doesn’t require much thinking.

Something fresh, crunchy, a little sweet, and most importantly, easy to throw together. This mango salad is exactly that.

I like adding mango because it gives the salad a nice sweetness, especially when you get a slightly sour or not-too-ripe one. Add some cucumber for crunch, tomatoes for freshness, and a few other greens, and you’ve got yourself a simple salad that doesn’t feel boring.

The dressing is just as easy. No complicated measurements or fancy ingredients needed.

✅ What You Need For The Salad

  • Mango, cut into small pieces
  • Cucumber, sliced
  • Tomatoes, sliced
  • Red bell pepper, sliced
  • Fresh mint leaves
  • Lettuce and other salad greens

For The Dressing

  • Fresh lemon juice
  • Olive oil
  • Vinegar
  • Mixed herbs
  • Honey

You can adjust the amount of each ingredient according to your taste. I usually like my dressing to have a nice balance of sweet, sour and herby flavours, so I don’t follow an exact measurement.

This is probably the easiest recipe on my blog. 😂

Just put all the salad ingredients into a bowl, mix the dressing separately, then pour it over the salad and toss everything together.

That’s it.

No cooking. No standing in front of the stove. No complicated preparation.

Just cut, mix and eat.

I like having this as a light meal or as a side dish when I want something fresh and simple. The mango gives it that little something extra, so it doesn’t feel like I’m just eating a bowl of leaves.

Sometimes, simple really is enough. 🙂
