Salad Recipe: Greek Salad With Shrimps and Homemade Dressing

I don’t think salad has to be boring.

Give me some fresh vegetables, a handful of juicy shrimps, a little feta cheese and a good dressing, and I’m already happy. This is one of those salads I make when I want something light and refreshing, but still filling enough to count as a proper meal.

This is my own take on a Greek-inspired salad with shrimps, packed with crunchy vegetables, fresh herbs and creamy feta cheese. It’s colourful, refreshing and, best of all, there’s nothing complicated about making it.

✅ What You Need For The Salad

  • Shrimps
  • 1 slice of lemon
  • Cucumber, sliced
  • Tomato, sliced
  • Red onion, sliced
  • Shredded carrot
  • Fresh mint leaves, chopped
  • Mixed salad leaves
  • Red bell pepper, sliced
  • Green bell pepper, sliced
  • Feta cheese

✅ For The Dressing

  • Fresh lemon juice
  • Olive oil
  • Vinegar
  • Black pepper
  • Salt
  • Oregano leaves

✅ How To Make It

First, let’s prepare the shrimps.

Bring a pot of water to a boil and add a slice of lemon. Drop in the shrimps and let them boil until they are cooked through. Once done, drain them and set aside to cool.

While the shrimps are cooling, prepare the rest of your salad ingredients. Slice the cucumber, tomatoes, red onion and bell peppers, shred the carrot, and chop the mint.

Put the mixed salad leaves into a large bowl, and then add all the vegetables, shrimps and feta cheese.

For the dressing, simply mix the lemon juice, olive oil, vinegar, black pepper, salt and oregano together. Give it a good stir, then drizzle it over the salad.

Toss everything together, and you’re done.

That’s pretty much it.

I like salads like this because every bite has something different going on. You’ve got the crunch from the cucumber and peppers, the freshness of the tomatoes and herbs, the salty creaminess of the feta, and the shrimps make it a little more satisfying.

The lemon-boiled shrimps also give the whole salad a fresh, light flavour without needing much seasoning.

Simple, colourful and filling. Exactly the kind of salad I like to make when I want something healthy without spending too much time in the kitchen.
